Whenever people talk about kids not wanting to eat their veggies, somehow Brussel Sprouts come to mind. The girls and I were reading about why it’s good it eat veggies that are in season and why they are good for you.
It is good for you to eat vegetables that are in season because you make the most of the nutrients in them and they are the best tasting then. Ever bought a watermelon in the winter? They suck. Not sweet at all! That’s because it’s NOT NATURAL to eat watermelon in the winter! They are FORCED GROWN!
We had read about Brussel Sprouts so the girls wanted to try them. I LOVE veggies so we decided to buy some to go with our fish dinner.

I blanche them in boiling water and add a tad of salt. Ever notice how when you cook veggies they turn this ugly dark green? Adding salt while it’s blanching will keep your veggies nice and green even though they’re cooked. I do the same with broccoli (also currently in season), which we’re also having tonight with our Wild Caught Halibut.
After I cook them for a few minutes (it takes a bit to cook thru to the center), I then sautee them in saucepan with garlic salt, pepper, olive oil.
We totally decide to skip carbs today. Typically we’ll do rice or brown rice or potatoes but thought we would keep it LIGHT tonight!
So, the girls didn’t really care for the Brussel Sprouts. They LOVE broccoli but the sprouts are too tough. I agree. They’re OKAY. But there’s a slight bitterness. Maybe I just got a bad batch??? Anyone know any good recipes?

I love b. sprouts. they do tend to be a little bitter which is why most kids don’t like them. They also don’t do well just being blanched. Even sauteing will not finish them off if it is done to quickly. They really need to steam a while. (till you can stick a fork in and they are tender.) Salt, pepper and butter and I love them. But not everyone does.

I agree with melissa on steaming them.After you steam them saute them like you did before and add fresh squeezed lemon juice at the end.My kids and Dan don’t like them but, I loveem!

Sister, I generally blanch them and then saute them with onions and pancetta. I’ve had no complaints on my end. It’s actually frequently requested to go with our meals.
