Lucy and I meet up with my Mom for lunch during her lunch break from work.

My mom is almost 65 but she loves working and I’m not sure she will retire any time soon.
Being the super smart mom that she is, Fanny Mae is a Senior Project Engineer at an Environmental Engineering company. With a chemical engineering degree, my mom works to design massive filtration systems that clean up water systems that are contaminated by chemical spills or leaks. Holla!
But I don’t envy her at all. I don’t miss the corporate world, having half hour (ok 2-hour) lunches. Don’t get me wrong, I don’t regret my engineering degree in the least but I also don’t want to use it. Ha!
THE FOOD
Anyway, who cares about corporate BS, we’re eating Thai!
Our lunch includes a chicken tom yum soup. The soup is yummy but the chicken is dry and seems like it was previously frozen or from those bags in the tuna fish section. I’m not a fan of the chicken. I prefer shrimp tom yum.
Some kind of chicken and vegetable dish. Sorry, I forgot to note what we ordered.
It’s just like Chinese.
Another chicken vegetable dish. Very similar to the first one. Thai people like their food spicy so here, they’ll ask how how spicy you want your food on a scale of 1-5. We decide on 2 because I still want to be able to taste my food and I can’t really do that if my mouth is on fire. (Dick disagrees, he loves spicy!)
Vegetarian Pud Thai. This was the best dish of all! Tofu with vegetables cooked in Thai traditional pud thai style. I usually like to get the shrimp pud thai but the tofu & vegetables was super Yummilicious!
These look like eggrolls but it’s actually our dessert. Fried bananas with a honey sauce. It’s not bad but I’ve had better fried banana.
It was really nice to have lunch just the three of us gals. Reminds me of when we were just kids going out to eat lunch with our mom on the weekends while out shopping. I had a really lovely time!
