Salmon with Dirty Brown Rice: Yeah I’m grocery shopping in my PJ’s.

Since I was already in my pajamas for pajama day at our homeschool co-op, I decided that I was SO COMFORTABLE that I did not want to change out of my outfit, even though I had some grocery shopping to do later that day.

Yes, it’s FREAKIN’ COLD! Ok, so I did get a few looks and smiles with my jammies on but I think it was moreso the hat. I’ve seen a few people rollin’ around in their jammies and now I understand why.

It’s so easy and comfortable. I’ll going to have to start stocking up on some more PJ’s. This is so great for the winter cause you know what it’s like when it’s cold. You don’t want to get out of bed, change your clothes and be naked in the cold, even for one second. If you’re in your pajamas, it saves you time getting dressed and you don’t have to expose your body to the cold. I’m TOTALLY down with this.

LEEK, PARSLEY, SALMON

For the dirty rice, (which is a delicious rice with minced veggies and lots of garlic). I buy some leek and Italian flat leaf parsley.

IMG_0198-25Dick wants a wild caught fisht that can be baked in the oven. I select the Wild Caught Alaskan Salmon.

CUISINART 2 in 1 BLENDER & FOOD PROCESSOR

My mom buys us this lovely Cuisinart 2 in 1 Blender/Food Processor for Christmas.

Thelma and Louise had already tested the blender to make some smoothies.

I’m going to now test out the food processor. The leek and parsley need to be chopped up finely for the dirty rice.

The blender works great! Saves me from getting cooking carpul tunnel trying to chop all this up and would normally take me about 15-20 minutes to mince.

I use the food processor for the garlic too.

SALMON: I greased the pan with olive oil, then layed down the salmon. Sprinkled salt and pepper and some of the minced leek and parsley.

SALAD: Romaine lettuce, tomato, cucumber, avocado, cilantro, olive oil, salt, pepper, red wine vinegar.

DIRTY RICE: Cook brown rice with water almost to the top. Because brown rice is more dense, it takes longer to cook. Add two cups of the minced veggies, and two table spoons of garlic (I like alot of garlic, makes it tastier.). Also, you’ll need to add a ton of dill weed. It makes the rice so super duper yummy!

Add salt and keep boiling the rice until it’s almost done. Then pour out all the water, reduce the heat from high to about 3-4 on a scale of 10 and cook with the lid on for another 30 minutes. The rice should be shaped like a cone, coming up to a pointed top.

Dinner turned out super. The kids even liked the brown rice this time. And they think they don’t like garlic.
