I love Thanksgiving dinner and I always eat to the point where I think I will explode. This Thanksgiving was no different, except, this time Lucy Lu and I made dinner.
The turkey was marinated by my dad, Freddy Mac, and stuffed by Lucy so there’s no recipe. I was the one who roasted it and kept it moist, continuously basting it with chicken broth and butter. Look how lovely it turned out.
THE TURKEY
The veggies and fruit were soaked with the delicious flavoring of the turkey, which my dad marinated similarly to the tasted of Peking Duck. Moist and Super Yummy!
THE GREENBEANS
We had two different green bean casseroles. One was made from scratch with fresh green beans and the other a quick canned version.

THE SWEET POTATOS
I had cooked the sweet potatos in the oven. It caramelizes the yams and makes them taste heavenly. This is my own recipe so what I did was mash up the potatoes with butter, cinnamon, pumpkin spice, salt, sugar and top it off with caramelized walnuts – using the same spices that I added into the pumpkin but seared in a pan. It turned out creamy with a perfect combination of sweet and savory, just the way I like it.
THE POPOVERS WITH GRUYERE

Topped off with Gruyere cheese. Yum! BTW, Gruyere tastes great with some red wine.
Beautiful no? I ask Lucy if they’re supposed to be all lopsided like that. She assures me they are.
THE COLLARD GREENS
Cooked slowly with onions and large chunks of pancetta. (Of course, I add my special mushroom seasoning. LOL)
THE APPLE CRUMBLE
The apple crumble turns out to be DA BOMB! The apples are sweet, soft with a cinnamon twist. You can also taste the tinge of orange zest which gives it a very delicious tangy taste. The oatmeal used for the crisp was like eating a crispy yet moist oatmeal cooky along with the apple. So incredibly yummy! Everyone is impressed by Lucy’s culinary skills since she is not known to cook much.
THE SPREAD
My girls had made these adorable Thanksgiving decorations in their homeschool co-op. They decorated the tables along with the persimmons until we had to set out all the food.

THE GUESTS

We had a great Thanksgiving and stuffed ourselves FULL with all the food! Honestly, I could hardly move after all the food. I felt like I was going to explode. Guaranteed I have gained 10 pounds.
